Then type a different email address  and password into the fields provided.

All of the current apps on the iPhone should stay on it. You will however need to check for upgrades to those apps by logging in as the previous user.

How to create an iCloud account.

On your iPad or iPhone you can go to the Settings app and click the iCloud settings, here you can create an iCloud account.

You can also go to icloud.com, here you can enter your Apple ID (this is the one that you use for the App Store in iTunes), then enter your password.

One important thing to note. If you are currently using MobileMe for Find my iPhone, you need to switch to using iCloud for this feature. MobileMe will go away at the end of June of this year. You should switch to iCloud for this feature. You set it up in a similar fashion. Select the icon that looks like a radar scope and select your devices. You can also set it up on your iOS device.

Remember Apple does not charge for iCloud (unless you need more than 5GB of storage). Also PhotoStream does not count against your allotted space. Neither does the ability for all of your music to be available.

Here are some links to Apple's website where they explain how to set up iCloud.
